Ingredients
  

  • 1 pound 450g fresh carrots, peeled and cut into sticks or rounds
  • 2 tablespoons maple syrup or brown sugar
  • 1 tablespoon olive oil or vegan butter
  • 1 teaspoon fresh thyme leaves optional
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon lemon juice optional, for brightness

Instructions
 

  • Wash, peel, and cut the carrots into uniform sticks or rounds. If using baby carrots, rinse thoroughly and pat dry.
  • Whisk together maple syrup, olive oil, sea salt, and black pepper in a small bowl. Add a squeeze of lemon juice and some fresh thyme for extra flavour, if desired.
  • Preheat your oven to 400°F (200°C). Toss the carrots with the glaze, ensuring they’re evenly coated. Lay the carrots on a baking sheet, ensuring they're in a single layer. Place them in the oven and let them roast for about 20–25 minutes. Stir them halfway through to ensure even cooking. They're ready to enjoy once they're tender and have a touch of golden caramelization!
  • Heat a skillet over medium heat. Add the carrots along with the glaze. Cook, stirring frequently, for 10–15 minutes or until the carrots are tender and glossy.
  • Transfer the cooked carrots to a serving dish. Top it off with a sprinkle of fresh thyme or parsley for a burst of flavour, if you like! Serve warm and enjoy!

Notes

  • Carrot Options: Baby carrots are convenient if you're short on prep time. Make sure they're all about the same size so they cook evenly.
  • Sweetness: Adjust the amount of maple syrup to match your taste. Add more for extra sweetness, or reduce it for a subtler glaze.
  • Make Ahead: Prepare the carrots and glaze up to a day in advance. Store them separately, then cook when you’re ready to serve.
