- 1 pound 450g fresh carrots, peeled and cut into sticks or rounds
- 2 tablespoons maple syrup or brown sugar
- 1 tablespoon olive oil or vegan butter
- 1 teaspoon fresh thyme leaves optional
- 1/2 teaspoon sea salt
- 1/4 teaspoon freshly ground black pepper
- 1 tablespoon lemon juice optional, for brightness
Wash, peel, and cut the carrots into uniform sticks or rounds. If using baby carrots, rinse thoroughly and pat dry.
Whisk together maple syrup, olive oil, sea salt, and black pepper in a small bowl. Add a squeeze of lemon juice and some fresh thyme for extra flavour, if desired.
Preheat your oven to 400°F (200°C). Toss the carrots with the glaze, ensuring they’re evenly coated. Lay the carrots on a baking sheet, ensuring they're in a single layer. Place them in the oven and let them roast for about 20–25 minutes. Stir them halfway through to ensure even cooking. They're ready to enjoy once they're tender and have a touch of golden caramelization!
