Ingredients
  

  • For the Cherry Filling:
  • 3 cups fresh or frozen cherries pitted
  • ¼ cup maple syrup or coconut sugar
  • 1 tablespoon cornstarch or arrowroot powder
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract

For the Crumble Topping:

  • 1 cup rolled oats
  • ½ cup almond flour or gluten-free flour
  • cup coconut sugar or brown sugar
  • ¼ cup vegan butter or melted coconut oil
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ¼ cup chopped nuts optional, for extra crunch

Instructions
 

Prepare the Cherry Filling

  • In a mixing bowl, combine cherries, maple syrup, cornstarch, lemon juice, and vanilla extract.
  • Stir well and let sit for 5-10 minutes while you prepare the topping.

Make the Crumble Topping

  • In another bowl, mix oats, almond flour, coconut sugar, cinnamon, and salt.
  • Add melted vegan butter or coconut oil and stir until the mixture becomes crumbly.

Assemble & Bake

  • Preheat your oven to 350°F (175°C).
  • Spread the cherry filling evenly in a baking dish.
  • Sprinkle the crumble topping evenly over the cherries.
  • Bake for 30-35 minutes, or until it turns golden brown and starts to bubble.

Cool & Serve

  • Let it cool for 10 minutes before serving.
  • Enjoy warm with vegan ice cream, dairy-free yogurt, or on its own!

Notes

  • Use tart cherries for a perfect sweet-tart balance.
  • Gluten-free? Swap the flour for more almond flour or oat flour.
  • Want extra crunch? Add chopped nuts or shredded coconut.
