- ¼ cup maple syrup or coconut sugar
- 1 tablespoon cornstarch or arrowroot powder
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
For the Crumble Topping:
- 1 cup rolled oats
- ½ cup almond flour or gluten-free flour
- ⅓ cup coconut sugar or brown sugar
- ¼ cup vegan butter or melted coconut oil
- 1 teaspoon ground cinnamon
- ¼ teaspoon salt
- ¼ cup chopped nuts optional, for extra crunch
Prepare the Cherry Filling
In a mixing bowl, combine cherries, maple syrup, cornstarch, lemon juice, and vanilla extract.
